Spicy Mixed Beans, Chicken & Brown Rice
With the cost of food rising, I thought I would do a low-cost filling chicken and brown rice dish with loads of flavour.
This easy-to-make recipe is made with everyday essentials from a low-cost supermarket, I used Aldi for my ingredients and at a total cost of £2.74 (plus store-cupboard spices) for the whole dish and a fantastic 68p per portion, this is a great dish to cook.
For this dish the ingredients you will need are.;
1 tin of mixed beans in chilli / spicy sauce (Aldi – 59p)
1 tin of chucky chopped tomatoes (Aldi – 38p)
300g Brown Rice (Aldi – 36p for the 300g) (£1.19 per 1kg packet)
1 chicken stockpot (Aldi – 19p each) (75p pack of 4)
1 Medium onion, thinly sliced (Aldi – 10p) (Pack 55p)
200g Cooked chicken strips, thinly sliced (Aldi – £1.12) (Pack of 340g – £1.89)
1tsp garlic powder
½ tsp oregano
1tsp salt
1/2 tsp cracked black pepper
Fry-Light Spray
Bringing it all together:
Cooking Method:
Cook the rice to the packet instructions, drain and set aside.
Brown rice takes a little longer than white basmati or jasmine rice and of course, you can use any rice you prefer.
Add a few sprays of fry-lightly oil to the frying pan, add the sliced onions and allow to cook for a few minutes. Add a little water to the pan and cover to help cook out if the pan becomes a little dry.
Add the chicken strips and all of the dry ingredients and continue not cook until the chicken is cooked through.
Add the mixed beans and chopped tomatoes, bring to a boil then add the chicken stock pot. Continue to stir though until the stockpot has been fully absorbed into the sauce.
Add the rice, and cook until the rice has come back to a temperature. Loosen with a bit of water to your preferred thickness and serve.
Garnish with a little freshly chopped flat-leaf parsley.
