2 Large or 3 standard eggs
1/4 Onion, diced
1/4 Red Pepper, diced
Chilli infused fry-light oil.
2 Smoked bacon rashers, diced
1/2 Medium tomato (deseeded and diced)
20g Reduced-fat cheddar
2 Medium mushrooms, sliced
1/2 Tsp. chilli flakes
Ch3opped parsley to garnish
Cracked black pepper
Salt
Method:
- To a medium hot frying pan, add a few sprays to fry-light and diced onion, fry for 2 minutes. Add the diced bacon, continue to cook for a further 2 minutes.
- Add the diced mushrooms and the diced red peppers, toss well to combine. Add the crushed chilli flakes, season with salt and pepper and loosen with a splash of water. and add the diced tomatoes.
- Add the beaten eggs, keep the eggs moving with a soft spatula until cooked though. Once cooked, transfer to a serving plate, garnish with freshly chopped parsley to finish.
